Turkey Salad Sandwich

Ingredients needed:

(1/2lbs) Turkey breast -shredded- (Brining recipe for added flavor)

1 celery stalk (diced)

1/2 shallot (diced)

1 leaf of romain lettuce

2 slices of provolone cheese

2 slices of potato bread (toasted)

1/2 cup mayonnaise

2 tsp garlic powder

1/2 tsp ground black pepper

1/2 tsp smoked paprika

1 tsp dried parsley 

1 tbs Sweet Heat Habanero 

 

Assembly:

- Add 1/2 lbs of shredded turkey breast to a mixing bowl. 

- Add your mayonnaise, celery, shallot, garlic powder, pepper, paprika, parsley and Sweet Heat Habanero. 

- Mix to incorporate. 

- Toast bread with provolone. 

- Add romaine lettuce to one slice of bread. 

- Add turkey salad. Top with final slice of bread and enjoy!

Chilaquiles Rojos

Ingredients needed:

- 20 Corn Tortillas

- 12 Guajillo pods

- 2 Roma Tomatoes

- 2 Garlic cloves

- 1 Shallot

- 1 TBS Salt (or to taste)

- 1 tube of Chorizo (beef or pork) 

- 6 eggs

- Oaxaca Cheese

- Refried Beans

- Crema Mexicana 

- Kickin’ Cayenne Hot Sauce

- Frying Oil

 

Cooking:

Sauce

- Cut and de-seed the guajillo pods. 

- Rinse the tomatoes. 

- Add tomatoes and guajillo pods to a pot, cover with water and bring to a boil. 

- Boil for 2 minutes and strain the water. 

- Rough cut the shallot and peel the garlic. 

- Add all vegetables to a blender with 2 cups of water.

- Add salt to taste.  

- Blend until smooth. 

 

Chips

- Cut corn tortillas into 1/8 triangles. 

- Add oil to a pan and heat to 350°

- Fry tortillas in batches until golden but slightly soft. About 2-3 minutes per batch. 

- Place fried chips on a wire rack and immediately salt. 

 

Refried Beans

- Add can of refried beans to a small pot. 

- Cook on low heat until soft. 

- Add Oaxaca cheese and cover to melt. 

 

Chorizo and Eggs

- Empty chorizo tube into pan and cook until most of the oil is cooked out. 

- Lightly pat chorizo with paper towel to remove excess oil. 

- Add 6 eggs. 

- Cook eggs on medium heat until scrambled. 

 

Assembly:

- Mix chips in the Guajillo/Tomato  sauce until fully coated. 

- Add Chorizo and egg mixture on top of your sauced chips. 

- Top with Oaxaca cheese, Crema Mexicana and Kickin’ Cayenne hot sauce. 

- Dollop a spoon full of refried beans. 

-Enjoy to your hearts content.
